You can’t delete payments and deductions in Payroll, but you can remove them from an employee..

Do this from the PAY screen when processing an employee’s pay details.

Select the Discard button next to the payment or deduction you don't need.

 NOTE: This won't delete the deduction or payment from payroll. You will still be able to reuse them.
